Cashew Chicken - Recipe

Valentines Day is made great with some yummy dinner! This recipe is very good, and doesn't take that much prep or cooking time!

1 lb boneless chicken, cut into pieces
1 red bell pepper, diced
2 garlic cloves, sliced thin
4 dried red chillies, chopped
2 T vegetable oil
2 T oyster sauce
1 T soy sauce
pinch of white sugar
1 bunch scallions, cut into 2in. lengths
1 1/2 C roasted cashews
cilantro leaves to garnish
Serve over rice

Preheat a wok an heat the oil. Add the garlic and dried chillies to the wok and stir fry over a medium heat until golden. Do not let the garlic burn, otherwise it will taste bitter.

Add chicken to the wok and stir fry until it is cooked through, then add the red pepper. If the mixture is very dry, add a little water.
I used fresh green chillies instead of dried red ones.

Cooking is made more fun with pretty Valentine flowers from Brian!
Stir in the oyster sauce, soy sauce, and sugar. Add the onions and cashew nuts. Stir fry for 1-2 minutes more, until heated through. Garnish and serve immediately.
