Chocolate Cherry Cake - Recipe

This is an ah-mazing recipe. So amazing in fact that I am surprised I haven't shared it before. It's the best chocolate cherry cake ever. Ev-ah, for appropriate emphasis:-). It's easy too! It's like a dump cake kind of thing I guess. If you're into chocolate, cherries, and cake {and really, who isn't?}, you have to give it a try!

1 chocolate cake mix (do not mix according to pkg directions, only use ingredients in recipe)
1 can cherry pie filling
1 t almond flavouring
2 beaten eggs

Stir all ingredients well by hand. Bake in greased 9x13 pan at 350 for 25-30 minutes.

That's it! Just stir it all up!
ICING - this is my own icing, the original recipe calls for a milk, butter, sugar, chocolate chip mixture...but I find it's a little finicky, so as not to end up with a "grainy" icing. So instead, I make a chocolate ganache.

1 C heavy cream
8 oz (which is 8 squares Bakers chocolate) Semi-Sweet chocolate, finely chopped

Heat cream on stove top whisking until warm/hot (do not let boil). Add chopped chocolate and whisk until melted and smooth. Pour over cake before it's completely cooled (doesn't have to be right out of the oven hot, but still warm...within 10-20 mins after removing from oven)
It's so shiny and beautiful!!
This cake will stay moist and keep weeks in the refrigerator, if it lasts that long!

  2. I have to say actually that even though I am still a cherry hater, even I can appreciate this cake! I also use the recipe for the glaze for on top for other cakes - it takes a banana cake to a whole new level!

  3. Try the ganache on a banana cake! It would be *heaven*, I tell you! Sooo good. This is my birthday cake this year, and I can't wait to consume it!
