Haystacks - Recipe

A naturally gluten free recipe...the kids made these all by themselves today! They did a great job, and it was really the first thing they've made almost entirely unassisted. (I did man the stirring while it was boiling, but they measured everything, stirred early on and they mixed in the dry ingredients and plopped them on wax paper themselves!) They were SO proud of their yummy work.

Grey, seeing that they were "made on the stove", declared he didn't want any fried cookies, and that they looked burnt. He wouldn't believe us that it was chocolate:-) Kenna was incredulous that they didn't have to "get baked". A fun kid activity...and an old one...I grew up making (and eating) these too!
Chocolate Coconut Macaroons (aka Haystacks)

2 C white sugar
1/2 C milk
1/2 C butter
6 dessert spoons cocoa powder
1 1/2 C oatmeal
1 C coconut

Cook in a pan, and bring to a boil the sugar, milk, butter & cocoa. Boil for 2 minutes, stirring constantly. Add oatmeal and coconut, and mix well. Drop by tablespoon onto wax paper. Let set.
